knife.rb either in your chef repository's .chef directory, or ~/.chef. My company-specific file looks something like this:
current_dir = File.dirname(__FILE__)
log_level :info
log_location STDOUT
node_name "chefusername"
client_key "#{current_dir}/chefusername.pem"
validation_client_name "org-validator"
validation_key "#{current_dir}/org-validator.pem"
chef_server_url "https://api.opscode.com/organizations/orgname"
cookbook_path ["#{current_dir}/../cookbooks"]
encrypted_data_bag_secret "#{current_dir}/encrypted_data_bag_secret"
knife[:sort_status_reverse] = true
knife[:vsphere_host] = "vsphere-hostname.example.com"
knife[:vsphere_user] = "username"
knife[:vsphere_pass] = "dat password"
knife[:vsphere_dc] = "OrgName"
knife[:vsphere_insecure] = false # require valid SSL certificates, use true
# if using self-signed certificates that aren't
# trusted in your local cacert.pem

I'm starting to look at the vsphere knife plugin for creating VMs and
provisioning them with Chef. One thing that is confusing me is how to specify
the chef server to use, and where to specify the pem validation files. Where
does that get set?
