Hi

I have just had the same problem.  I am running the latest version of Chef.  I
am using encrypted data bags so I needed to edit a data bag using knife with a
supplied secret file.  My workstation is OS X.

I had to supply the full location to vim for it to work.

export EDITOR="/usr/bin/vim"
knife data bag edit ... --secret-file ...
