[chef] running only part of a chef run

Hi chefs,

Is it possible to run a chef run on only part of the run list ?

Here is more about my situation :

We have a bunch of servers managed by chef. Some of these are used as a staging environment and developers would like to be able to run a specific cookbook really quickly while a complete chef run can take a few minutes.

Is there a way to achieve something like that ?
