I found the answer to my own question, wanted to share with anyone else that’s curious:

This will show current versions being used in all environments (“latest" if no constraints):
$ knife environment compare —all

This will show the latest version for all cookbooks:
$ knife cookbook list  ( append -z option to show latest local versions)

Is there anyway to show which cookbook versions an environment will use?  This is aside from setting cookbook_versions and just running ‘knife environment show’.

Thanks,
