Once you install the chef-server package its pretty straight forward if you use the `chef-server-ctl help` command.

I also found this resource really useful when we had to customize a few things http://docs.opscode.com/config_rb_chef_server.html at the bottom there is a link in the "Warning" box with optional settings that we had to dive into to tweak our configuration.
