Historically, 'knife environment from file' was the only option.  Knife-essentials[1] introduced shortcuts for treating your Chef server like a filesystem.  It's knife-essentials that introduced 'knife upload <whatever>'.  As of Chef11, knife-essentials was merged into core Chef.
