I believe you can edit the user in CouchDB. Go to URL similar to this for your install.
http://localhost:5984/_utils/database.html?chef/_design/users/_view/all
I did this once before, and I think if you remove the password for the admin user it will authenticate with the default Chef password. Someone please correct me if I'm wrong.
