[chef] deploy a new version of a rails app?

(I asked this in #chef with no response, so I'll try here as well...)

I must be missing something completely obvious: I've brought up a node running a rails app, all is good.  How do I deploy a new version of the app?  Do I just run chef-client on the node?  (That seems very counter-intuitive after coming from the cap/rubber world.)
