oh I see, now how would I go about removing the one instance? Which would be better to keep?

Supposed to be 1 or the other, not both.

You have 2 chef installs :)

1. Installed wherever your ruby is (the gem)
2. Installed in /opt/chef (the Omnibus installer gotten via curl)
