I'm with Dan. This question really gets down to people, policies,
procedures, and preparation. Tools are just there to help you with these
things.
Personally, I think you're making a mistake if you're not running chef-client
as either a daemon (with splay) or as a regular cron job, and on at least a
daily (if not hourly) basis.
