Since internally we use CentOS and CentOS 7 was just released today we obviously don't have it in jenkins yet and don't have builders and testers for it.

I've run the RHEL6 builds on fedora 20 and they flame tested fine for me, and we haven't heard of any issues. Omnibus will serve up the RHEL6 builds if you hit it from a RHEL7 box so 'curl | bash' or the chef-full bootstrap should work fine.

What do you mean by 'supported' ?

RHEL7 is based on Fedora 19, which has been supported since its
existence.

Chef will work on RHEL7 with the shipped Ruby, and I'd be astonished
if the RPM didn't just work, since it works on Fedora.

If you want an omnibus package, you can make one yourself by checking
out Omnibus Chef, and building it on your RHEL7 machine.
