It seems you're installing chef12, so best idea would be to follow This: http://docs.getchef.com/install_server.html#standalone 

You'll found all the commands to create an organization and a validation user.

I am going to recommend you get chefDK (from opscode/chef) for your workstation.
The server needs to happen first. Its fairly strait forward. Google will be your friend here. 
Onces it up, youll get obtaining some validation keys from it, youll need them on your workstation, aswell as for the nodes.
Setting up a node is known as "bootstrapping" which should also help in your googling.
