Dave,
I've been able to recreate the issue. It appears a newer version of savon, a
dependency of the upstream WinRM gem, is causing the issue.
I've opened a ticket in the KNIFE_WINDOWS project [0] and the upstream WinRM
gem [1]. Current quick fix is to just downgrade the savon gem to version
0.9.2:
gem uninstall savon
gem install savon -v 0.9.2
