Thanks for the replies all. I guess I had my head on wrong in that I was imagining a from-server dump to Graphite, rather than a from-client dump.

Chef-handler makes interesting reading and something I will definitely use. Chef-handler-graphite unfortunately not useable as given due to some environmental constraints, but certainly a good jumping off point for a handler I can put in place.
