[chef] overriding a provider for a given resource

Is it possible to override a provider across the board for all my recipes that I intend to run. For example, I'd like to extend the provider for the remote_directory resource a bit to do some things specific to my deployment instead of writing a new resource/provider and using that resource wherever I would have used remote_directory before.
